Role qualifications: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Track and inventory all china, glassware, and silverware on a monthly basis.Keep pool storage areas clean and maintained.Ensures all china, glass, and sliver storage areas are clean and organized.Keeps loading dock and garbage compactor clean and maintained.Ensure and follow up that equipment faults are reported through a trouble report, to maintain an effective working.Checks walk-ins and cooler temperatures to ensure proper holding temperatures. ![]() Gives instructions to Stewards in sanitation practices.Observes workers to ensure proper cleaning and sanitizing procedures are being followed.Implements the Policies and Procedures in operating the Stewarding department.Reports deficiencies or concerns to the outlet Chef or Manager.Work with Outlet Chefs to coordinate schedule, training staff, pars for chemicals in each outlet.Must be able to perform all duties of a Steward and Night Cleaner.Position summary: The Chief Steward supervises and coordinates activities of Stewards and Night Cleaners and other workers engaged in the sanitation of the Food & Beverage outlets, and assigns stewards to each kitchen based on the needs of the various outlets.
